Wow, my first attempt for these cute raw cakes, can;t wait to make more different styles of raw desserts! These are sugar free, all vegan and all raw yumminess. AND a good source of antioxidants and nutritional goodness of chia and cacao ❤
What you need is
1 cup big & soft dates, pitted and soaked overnight
1 1/2 cup raw almonds
1/2 cup of raw cacao powder
1 tbs back/white chia seeds (you can use ground ones too)
some of the date water( in which you sokaed them) or almond milk
1 cup raw cashews, soaked overnight
6 big & soft dates, soaked overnight
You can get creative here, I chose to put some organic cacao nibs. Next time might add some shredded coconut and almond crush!
How to make them:
First pulse the almonds into a fine flour with a high speed food processor. Add in the rest of the base ingredients and pulse till it becomes an even batter.
Then spread out the base batter evenly or a plate. Let it chill for an hour or two in the fridge or freezer.
Next you can process together the ingredients of the cashew frosting ( no specific order, I just put all of them together at the same time) until it becomes a smooth and creamy texture. Choose the amount of almond milk here carefully, add in little by little and try to keep the texture solid but smooth, if you add too much the consistency becomes too liquid.
Take the cake base and spread the ready frosting evenly on top. Top with anything you like!
Chill for another few hours in the freezer and cut into small and cute pieces if you like 🙂
Serve and enjoy chilled!
