We might not have much snow or a traditional tree with decorations, but we just made these cute little gingerbread cookie stars today morning and they taste just like Christmas!
These cookies have the taste of my childhood, but they are a healthier option. Sweet without sugar, easy to make, no baking involved and completely plant based.
Here’s what you need:
2 cups of dates (soft and pitted)
1 cup of almond flour (easy to grind your own)
quarter of a cup of raw cocoa powder
1 or 1/2 tsp of organic cinnamon
1 or 1/2 tsp of ground cardamom
dash of ground nutmeg
dash of ground ginger
First you need to process the dates with your food processor (I used the chopper blade) until they become a big gooey mass. Then add the almond flour, the cocoa powder and the rest of the spices. Process all really well.
I was not measuring the spices that make this dough taste like Christmas so carefully(cinnamon,cardamom, nutmeg,ginger), more like adding on the go while processing it all into a dough. You can add more or less depending on the strength of taste you want!
After the dough is done, place it on a plate and flatten it with your hands to an even shape. Keep the dough in the fridge for at least a few hours before making the cookies, I kept it overnight.
You can either use those ready made cookie cutter shapes or get creative and shape what ever your heart desires from this dough! We found a cute little star from the supermarket last week.
Finally to add a touch of “Kerala” into them I topped the cookies with freshly shredded coconut. Again you can get creative and top your cookies with all kinds of fun.
These cookies will also go really well together with my Raw Vegan Eggnog (Nutnog) we made last week.
