Since I became pregnant I have been learning and experimenting with a lot of both cooked vegetarian and raw vegan food to make sure both me and the baby have a balanced and healthy diet. By eating healthy food I am making sure that both mine and the baby’s dietary needs are well met, but every now and then(or actually all the time nowadays) I get such heavy cravings just to stuff myself with anything sweet.
I swear I could eat a mountain of chocolate if handed the opportunity, but don’t really want to poison myself (or our little one) with all that bad refined sugar in the sweets and treats you can eat. It’s bad enough that refined sugar and all those sweets are so toxic for both of us, but eating cakes, chocolates or cookies make me feel bloated and tired.
Here are two of my absolute favourite, sweet, healthy, fresh and raw desserts that I just can’t get enough of 🙂
Pineapple & avocado smoothie
This smoothie is something my husband loves to make for a dessert and it is seriously to die for. It’s so healthy and tastes both sweet and creamy. Both the pineapple and fresh aloe vera relieve indigestion which is a common symptom during pregnancy, and the avocado is an excellent source of healthy omega 3 fatty acids, which is very important for the baby.
While making this smoothie, we measure the ingredients by rule of thumb, here is a close suggestion:
2 cups of pineapple
half of a big avocado
2 cups of coconut water (or normal water)
the inside of a small piece of aloe vera plant
a few mint leaves for the twist
All you need to do is blend it all together and it’s ready to be served. Vivian likes to put a few chunks of avocado on top to chew while drinking this smoothie 🙂
Raw vegan brownies
These brownies are completely raw, super simple to make and a healthy choice for a dessert. Ans so yummy super fudgy! I’m a friend of anything with dates and raw cacao and really love to have these with a cup of tea or coffee when I’m craving for something sweet!
Here’s what you need:
2 cups of dates
1 teaspoon of avocado
1 cup of almond flour (easy to grin your own)
quarter of a cup of raw cocoa powder
First add the dates into a food processor and process them until they become a big gooey mass. Then add the almond flour (we actually ground our own in advance with the same food processor since we couldn’t find any at the store here) and the cocoa powder. Process all really well. Sprinkle some raw cocoa powder on a plate and press the brownie dough evenly on top. Keep in the fridge for 1 to 2 hours.
Finally cut into small pieces, turn them over and voila! incredibly delicious raw brownies done, yum!
